Cooking the meat in soy sauce, vinegar, garlic and black peppercorns is a popular Filipino meal – Adobo.Here we added a Coconut cream to this meal, which makes it creamier and richer in taste. Amount of ingredients for Keto Creamy Chicken Adobo here is for one person.
You will need:
150g – Chicken Thighs or Legs
1 Tbsp – Coconut vinegar
2 tsp – low-sodium Soy Sauce
1.5 cups – Chicken Stock
1.5 Tbsp – Coconut Cream
1 tsp – Olive Oil
2 pc – crushed Garlic Cloves
1 tsp – Black Peppercorns
1 pc – dried Bay Leaf
How to do it:
1.- Heat olive oil in a braising pan.
2.- Add chicken and sear until brown on both sides.
3.- Add bay leaf, garlic, stock, vinegar, soy sauce, black peppercorns.
4.- Simmer for 20-25 minutes.
5.- Reduce pan juices and stir in coconut cream.
6.- Season as needed with salt.
