Keto Mexican Scramble

Mexican Keto Scramble is filling and nutritious at the same time. The spinach is part of the meal which is considered a super food.  This is a great way to start your morning. Ingredients are for 1 person.

You will need:
50 grams – Chorizo Mince
10 grams – Thinly sliced Red Onions
1 cup – Spinach
3 Eggs
2 tbsp – Shredded Manchego Cheese.

How to do it:

1.- Put the chorizo in a non-stick pan and saute.
2.- Next are red onions. Stir together until caramelized.
3.- Add and saute spinach until wilted.
4.- Stir in eggs.
5.- Than add in cheese.
6.- Serve.
